This was an easy and fast dish we enjoyed. First I sauteed quickly lots of vegetables, red and green peppers, zucchini, onion and garlic with some chopped fresh ginger. Then add my curry powders, I have several ,and let the spices cook. Then a can of coconut milk and a little chicken stock and let it cook and at the last minute I added the
shrimp. I ate mine over a bed of spinach but Lucy had some sticky rice with
hers. It was yum. I am having this for lunch today.
Sounds yummy! I'll have to try that -- I'm a big curry fan.
