Food post

Here it is the middle of May already and I haven't posted very often. Busy Busy busy. Got home from NJ and helping my mother get moved into an assisted living place I thought I should make my daughter a nice home cooked meal. Tenderloin beef kabobs and grilled veggies! Just skewered and marinated in olive oil and salt and pepper.
Cooked the meat second and only for a few minutes it was still pink inside. Served with oven baked curry sweet potatos. Just rolled in olive oil and curry powder and salt and pepper bake on oiled sheet pan, yum!



For Cinco de Mayo I made fish tacos with some lovely fresh halibut, pan sauteed in corn meal with fresh pico de gallo, guacamole and a cilantro lime crema.
Served with vodka Mojitos with crushed strawberries. OLE!

  1. I haven't posted much recently either, and I'm behind in reading my favorite blogs such as yours -- having too much fun with my new granddaughter. But your fish tacos look delish and inspire me to actually cook today!
